Malabar Coast, India. Monsoon Aged. AA Grade.

This is one of the oldest and most unusual coffees in the world. On the Malabar Coast of South India, harvested beans are laid out in open warehouses during monsoon season — exposed to warm, humid winds for months. They swell. They soften. They develop an earthy, full-bodied character that no other process produces anywhere else on earth.

Our South India Monsoon Malabar coffee is air roasted AA grade, the highest classification for this origin, in small batches to protect every note the monsoon built into the bean.

The Monsoon Aging Process — What Actually Happens

Most coffee processing takes days. Monsoon aging takes months. From June through September, the beans absorb moisture from the coastal winds, expanding nearly double in size and losing almost all their acidity. The result is a cup that's low in sharpness, high in body, and unlike anything a standard washed or natural process produces. It's a method unique to this coastline centuries old and still done by hand.

What Air Roasting Does for This Bean

A bean this dense and low in acidity needs precision. Drum roasting pushes it toward flat and bitter.

In air roasting, hot air wraps every bean from every angle — no drum, no direct flame — letting the earthy depth, subtle spice, and chocolate aroma come through clean. Medium roast. Full body. Nothing lost.
