Sometimes, you do not know what you do not know! I am not a fan of harsh and bitter coffee. Yet, that is what we are sold every day. It is one thing to drink a cup of joe “percolated” by the base dining hall while on a mission and it’s an entirely different thing when we pay $6 for a 12 oz. cup.

Last summer, I had the great pleasure of sampling a cup of Ethiopian Yirgacheffe Organic Natural Roast air roasted coffee. I knew I tasted something special and I needed to know more.

The flavor and freshness were incredible; this is how Mother Nature intended coffee to taste!

Roasted coffee has the most freshness and flavorful life span of less than 3 weeks. This means the flavor quickly decays three weeks after the beans are roasted. It is simply a natural function of roasted beans interaction with air. Big coffee shops and supermarket brands often store their roasted beans in warehouses for weeks if not months.

I discovered that the bitter flavor you taste in most coffee beans comes from drum roasting. In drum roasting, and 99% of the beans in the world are drum roasted, the bean’s protective skin, called the chaff, separates from the bean and starts to burn before the bean is roasted. This smoke contaminates the drum and gives the bean a smoky bitter taste and that bitter taste what you taste in your coffee cup.

I decided to bring air roasted coffee to every cup in the world.
