Gedeo Zone, Ethiopia. 1,900 Meters Above Sea Level.
Morning in the Gedeo Zone, the heart of Yirgacheffe, smells like ripening coffee cherries. At 1,900 meters, more than 650 small family farms handpick each cherry at peak ripeness — the same way their families have done for generations. That care at the source is what makes this Ethiopian air roasted coffee worth drinking slowly.
From Cherry to Cup — The Natural Process
After harvest in October, the cherries lay out under open sky for 18 days. Turned every few hours by hand, the fruit dries slowly and evenly, protecting its character and drawing out its natural sweetness. No shortcuts. No rushing. The Aricha Mill, operated by Cherab na Betesebu and family, oversees every step because the quality depends on it.
What Air Roasting Does for This Bean
Most Ethiopian coffees lose something between the farm and the roaster. Hot air wraps every bean from every angle — no drum, no direct flame, no burnt edges dressed up as depth. The result is a roast that preserves exactly what those 650 farms worked to grow into each cherry.
“Heritage, patience, and craftsmanship in every cup.”
What's in the Cup
The first sip is bright and lively. Clean acidity that wakes up the palate, followed by a gentle natural sweetness and a smooth, velvety body. As the cup cools, floral and citrus notes come forward. A soft, nutty finish that stays with you.
Drink it black to taste its full character. Add a splash of milk to soften the brightness while keeping the complexity intact.
