The ancient heirloom Ethiopian Yirgacheffe Arabica beans yield a flavor profile coffee connoisseurs love. Yirgacheffe bean is complex with flavor notes that vary season to season. It drinks with above average acidity, high sweetness, and above average body.
It is grown at 1900 meters in Ethiopia and harvested beginning in October for a March export.
Our farmers use a gentle natural method to process the ripe cherries. They are turned every two to three hours for several days to avoid over-fermentation until properly dried usually around 18 days.
This natural processed Ethiopian bean is sourced from family-owned farms organized around the Aricha Mill in the Yirgacheffe district of Gedeo Zone. The Aricha Mill is a washing station owned and operated by Cherab na Betesebu and his family. Coffee producers from over 650 small farms deliver their ripe cherries to Aricha Mill where the cherries are sorted for defects and placed on raised drying beds in thin layers.
This adds a smooth nutty finish with floral and citrus notes.
