Why Swiss Water Decaf Coffee Tastes Different
Most decaf is stripped of caffeine using chemical solvents. The Swiss Water process doesn't work that way. Water, time and carbon filtration removes the caffeine while protecting the soul of the bean: no chemicals, no shortcuts, no flat hollow up. It takes longer and cost more to produce. The result is decaf coffee that tasted like the real thing.
Where These Beans Come From
Small family farms in Colombia's coffee triangle grow, pick, process, and dry every bean by hand. At 1,500 meters, the altitude slows the cherry's development and concentrates its flavour. Farmers use elevated solar drying tables to protect the beans from rain while drawing out their natural sweetness. A detail that shows up in every cup.
Main harvest runs October through January. A second harvest, known as the Mitaca, follows in April through June.
What Air Roasting Does for This Bean
Hot air wraps every bean from every angle. No drum. No direct flame. No burnt edges dressed up as depth. For a decaf bean that's already been through the Swiss Water Process, air roasting is the only method that protects what's left — the subtle, layered flavour that makes Sweet Dreams worth drinking at any hour.
